Looking for a delicious -gluten-free / dairy-free / meat-free recipe? My dill & mussel carbonara recipe is up to the taste challenge, if you are excluding certain foods from your diet.

200g cooked mussels
100g gluten-free spaghetti
Handful of chopped dill
1/2 fish stock cube
3 beaten eggs
2 finely chopped shallot or small onion
2 minced cloves of garlic

Method

1. Cook & drain spaghetti
2. Whilst pasta is cooking, gently fry shallots & garlic
3. Add the dill & stock cube with a little pasta cooking water to shallots & garlic
4. When stock cube dissolved, add mussels to cook
5. Toss slightly cooled pasta into pan and add beaten egg
6. Stir & serve

The trick here is to ensure pasta is warm enough to cook the eggs mixture without scrambling it (which is what will happen if added just cooked pasta).
