Persian Rice & Potato Tadig

Persian food seems often overlooked in the West but is a fantastic comfort food that always brings a smile to my face whilst cooking it. Tadig is a wonderful combination of carbohydrates with lentils, potatoes & rice.

Rice is par-boiled & prepared before being layered on top of a base of thinly slice onions & potatoes in a rice steamer with a little oil at the bottom, which goes crispy as the rice continues to be cooked.

To prepare the rice:

Mix par-boiled rice with yogurt, cardamon, green lentils, saffron soaked in milk & salt. The bottom layer of rice in contact with the potato & onion becomes a super crispy layer that everyone at the table will be fighting over (with the yogurt helping the rice become crispy).
