Homemade coconut lamb curry with almond & fennel seed rice + onion & tomato salad

A homemade recipe that uses the traditional onion gravy base that is used in takeaway Indian cooking. The base is easily made by boiling:

- chopped white onions
- one carrot
- two cabbage leaves
- coriander stalks
- fresh garlic
- fresh ginger
- 1tbs of curry powder

Boil for a good hour in water till onions are almost dissolved before blending till smooth. This onion gravy base can be frozen in batches and amazing curries easily made quickly (ever wondered how Indian takeaways manage to make their curried so fast?) by adding ingredients such as almond powder, coconut milk, tomato paste, ginger & other spices.
