Easy recipe rustic Italian chicken thighs in tomato, white wine & mustard - a one pot wonder that’s as easy to make, as it is delicious, which I first started making whilst doing a snowboard season in the Alps. It seems to sustain an unfeasibly large amount of garlic, which when fried just before point of burning, add a slightly bitter overtone to the dish.
  1. Season & fry chicken thighs in pan
  2. Add chopped onion, carrot, leek & roughly crushed garlic (LOTS)
  3. When soft, deglaze pan with white wine
  4. Add potatoes, canned tomato, chicken stock, mustard & honey
  5. Cook in oven for 30 mins
