Venetian orange & lemon cream linguini recipe

When visiting Venice, I was stuck by the simple, elegant approach to pasta. Pasta is the stars of dishes, which can be difficult to appreciate outside of Italy, where the sauce is the focal point. Here, I have a 5 ingredient vegetarian pasta dish which reflects the elegance of Venice & can be made in under 10 minutes.

INGREDIENTS

Double cream
Zest of lemon
Zest of orange
2 cloves of garlic
Parmesan
Linguini or spaghetti pasta

1. Bring salted water to boil & add pasta
2. Gently fry garlic in olive oil for one minute
3. Add the lemon & orange zest + cream to pan
4. Reduce slightly before adding Parmesan & pasta
5. Serve immediately

In Italian cookery courses, I’ve seen some chefs add mint to the dish or cook the garlic out with a little Sherry or Cognac which can add a layer of complexity but this simple version of this dish is just as delicious.

For additional texture, garlic / mint leaf butter fried breadcrumbs can be added on top (as per my photo) or including fresh peas.
