Seafood & Smoked Fish Chowder Recipe

Today was am epic kitesurfing session but as it's September now, it's been getting cold, so I wanted a nice warm chowder to warm up. This seafood chowder recipe is adaptable to different kinds of seafood but works best with mussels, clams & smoked fish.

Seafood Chowder Recipe

  1. Steam mussels in a pan with one chopped carrot, one chopped leek, two chopped onions, two chopped celery sticks, bay leaf & white wine
  2. Remove mussels from pan but keep veggies & cooking liquor in pan (essential for flavour)
  3. Add one quart/litre of fish stock, half a quart/litre of cream & half a quart/litre of milk plus a little corn starch
  4. Bring to simmer before adding four chopped potatoes, chopped dill & chopped parsley - cook till potatoes are done
  5. Add pre-cooked smoked haddock, mussels & clams or prawns - simmer for 3 mins before serving
