BBQ Mixed Meat & Seafood Paella Recipe

Paella on the BBQ? YES! The best way to cook one outside with the added flavour from the charcoal. It’s very simple to make (especially if you can get Paella spice from Spain).

Paella recipe / ingredients as follows:

500g Paella rice
3 large onions
1 minced whole garlic bulb (yes, your read right!)
1 chopped red pepper
1 chopped green pepper
250g of mussels
250g of white fish
250g of prawns
250g of squid rings
500g of chicken thighs
250g of chopped chorizo
Chicken stock
Fish stock
Paella spice (or make your own with smoked paprika, sweet paprika, pepper, turmeric, cinnamon & saffron)

Paella cooking steps:

  1. Fry seasoned chicken thighs till browned in olive oil
  2. Remove from pan & add chopped Chorizo
  3. Add chopped onions & fry to translucent
  4. Add the chopped garlic & peppers - fry for 2 mins
  5. Add paella rice, spices & coat in olive oil / chorizo oil
  6. Add chicken & stocks - cook till rice almost tender
  7. Add seafood & cook for 5 mins

Some notes:

Use mussels in shells, as they add flavour
Do use the whole garlic
Cook the seafood at end for 5 minutes to ensure it stays tender but ensure all mussels open
Don't let a Spaniard tell you he/she doesn't like Chorizo in Paella
