French Onion Soup Recipe

Whilst it takes a while to prepare, this is actually easy to make. And make sure you have good French stick & Gruyere cheese, as it really complements & completes the soup. The French Onion Soup is on old recipe, thought to date back to Roman times when onions were cheap & plentiful for everyone.
  1. Slowly fry / caramelise half a kilo of sliced white onion for 20 to 40 minutes in butter
  2. Once onions dark & caramilised, add 2 tbs of flour & slowly add 250ml of white wine
  3. Add 1 litre of beef stock (or vegetable stock), a bay leaf, sprig of thyme, & splash of balsamic vinegar
  4. Cook for 20 minutes before topping with French stick slices & Gruyere grilled for 3 minutes
